It took me a while to get on board with overnight oats. Growing up, my parents and grandparents always served oatmeal hot and fresh from the stove. So you can imagine my discomfort when it came to eating it cold. Admittedly, I’m still a fan of cooking my oatmeal, but overnight oats are a great alternative for 4AM wake-up calls or if you’re constantly eating out of Tupperware while you’re on the go (like me).
Oatmeal is high in fiber, low in fat, and loaded with tons of complex carbs that will fuel your body throughout the day. I like adding flaxseed to mine for a little extra fiber and plant-based omega-3 fatty acids. However, feel free to omit these or swap them out for chia seeds instead.
- 2 cups old-fashioned rolled oats
- 1 tablespoon flax seeds (optional)
- 1/3 cup fresh blueberries
- 1/2 teaspoon vanilla extract
- 1- 1/2 cups SILK cashew milk
- A dash of cinnamon
Combine everything except the blueberries and bananas in a bowl, or sealed container and place in the refrigerator overnight. Add your blueberries and bananas in the morning and enjoy!
